Gingerbread waffle with cardamom cream and brandy cherry sauce
Get festive and make that magical Christmas moment with this lovely recipe. The smell of ginger, cinnamon, and butter will warm your house - a perfect holiday spirit lifting you can simply create.

Serves: 2
Ingredients:
1/2 cup of plain flour
1/4 teaspoon of baking powder
1/4 teaspoon of baking soda
A pinch of salt
1/2 tablespoon of caster sugar
1/2 teaspoon of ground cinnamon
1/2 teaspoon of ground cloves
1/2 teaspoon of ground ginger
1 egg, separated york and white
50g of butter, melted and cooled to room temperature
1/2 cup of milk
1 tablespoon of treacle or honey
Cardamom cream
1/2 cup of crème fraîche
A pinch of ground cardamom
Brandy cherry sauce
10 cherries, seeds removed
1/2 cup of caster sugar
1/2 cup of water
1 tablespoon of brandy
Methods:
1. Make brandy cherry sauce. Combine cherry, sugar and water and bring it to boil over high heat. Reduce to low heat after reaching the boiling point. Let it simmer until the sauce reduce to half. Add
brandy and remove from heat. Cover with lid.
2. Make cardamom cream. Beat cream and a pinch of ground cardamom with a spoon. Chill.
3. Prepare the waffle batter. Reheat the waffle iron pan. Beat egg white until soft peak forms. Meanwhile mix all other ingredients together. Fold in the egg white. Pour the batter into pan. Cook for 3 to 5 minutes.
Serve warm with brandy cherry sauce and cardamom cream.
